This versatile relish is fresh and full of flavor! It’s great by itself, with tortillas, or as a taco topping. Super versatile, super awesome, and super easy.
- ¾ cup cubed avocado
- ¾ cup cubed cucumber
- ½ cup minced shallot
- ¼ cup lime juice
- 2 tablespoons chopped cilantro
- 1 tablespoon minced garlic
- 1 teaspoon sambal oelek*
- 2 tablespoons sesame oil
- *Sambal oelek is an Asian chile paste that adds a touch of heat and a lot of flavor. Look for it in the spice aisle or online.
In a medium bowl, combine all ingredients and lightly toss. Season with salt and pepper. Refrigerate until needed.
