Ale Chicken Brine

Looking for a great way to grill your Smart Chicken? Use your favorite beer or ale to create this tasty brine.
- 4 skinless Smart Chicken breasts
- 2 bottles ale
- 1/4 cup kosher salt
- 2 tablespoons brown sugar, packed
- 1 tablespoon black peppercorns
- 1 tablespoon mustard seed
- 1 tablespoon fennel seed
- 2 cloves garlic, chopped
Combine all ingredients over medium heat until the salt and sugar are dissolved. Cool completely. Brine chicken for 4 hours. Rinse and pat dry. Grill chicken to 165°F, and serve with caramelized onions and roasted red peppers.
