Minty Apple Punch


Makes about 1 gallon

This light apple punch is spiked with a touch of mint that’s both unexpected and refreshing.


  • 4 cups water

  • 8 green tea bags

  • 3 cups apple juice

  • 2 cups Mint Simple Syrup (recipe follows)

  • ½ cup fresh lemon juice (from 4 lemons)

  • 2 cups sparkling water, chilled

  • Ice

  • Fresh mint, for serving (optional)


In a small saucepan, bring the water to a boil over medium-high heat. Turn off the heat, add the tea bags and let steep for 6 minutes. Remove the tea bags and cool the tea to room temperature.

In a large pitcher or drink dispenser, combine the cooled tea, apple juice, Mint Simple Syrup, and lemon juice. Refrigerate until ready to serve.

Just before serving add the sparkling water to the pitcher. Pour the punch into ice-filled glasses. Garnish with fresh mint.

Mint Simple Syrup Ingredients

  • 2 cups water

  • 1 cup sugar

  • 2 cups fresh mint leaves (packed) or 1 to 2 teaspoons peppermint extract

Mint Simple Syrup Directions

In a small saucepan over medium heat, bring the water and sugar to a boil, stirring occasionally until the sugar has dissolved. Remove the pan from the heat and add the mint leaves or extract. Let syrup cool. (Strain if using fresh mint leaves.) Store in the refrigerator in a sealed container for up to two weeks.
