Makes 4 Sandwiches
2 to 3 boneless skinless Smart Chicken breasts
4 brioche buns
1 to 2 avocados
6 slices bacon, cooked
4 cups sliced red cabbage
½ cup mayonnaise
1 thinly sliced shallot
1 thinly sliced jalapeño
1 tablespoon hot sauce
Season the chicken with salt and pepper and cook in a pre-heated and oiled pan or grill pan until the internal temperature registers 165°F in the thickest portion of the breasts.
Meanwhile, in a medium bowl, combine mayonnaise, hot sauce, cabbage, red onion, and jalapeño and season with salt and pepper.
To serve, toast the bun and place the spicy slaw on the bottom. Place the chicken on the slaw and top with bacon and avocado before serving.
