Makes about 8 cups


  • 10½ ounces dry oatmeal (about 3 cups)

  • 1½ cups mixed nuts

  • ¾ cup dried fruit (no cherries)

  • ¾ cup shredded coconut

  • 1 cup maple syrup

  • ¾ cup canola oil

  • 1½ tablespoons vanilla


In a bowl, soak the oatmeal in maple syrup, oil, and vanilla for 1 hour or preferably overnight. Add the coconut to the mixture and spread on a sheet pan. Roast in a 300°F oven for 30 minutes, stirring every 10 minutes. Remove from the oven and mix in dried fruit and nuts. Let cool on the sheet tray. Once cooled, serve or bag and store for later use.
