Easy Kale Salad With Blood Oranges, Pine Nuts & Goat Cheese

  • Kale (stems removed)

  • Grilled Smart Chicken bonless skinless breasts or tenders

  • Blood oranges, supremed/sliced into segments

  • Soft goat cheese

  • Toasted pine nuts

  • Flake salt

Ingredients (for the Blood-Orange Vinaigrette)

  • Olive oil

  • Blood orange juice

  • Thinly sliced shallot

  • Salt and pepper, to taste


Combine the oil and blood orange juice and whisk until emulsified. Add the sliced shallot and combine. Add salt and pepper to taste.
