Classic Pico


Makes about 4 cups

This fresh, simple pico is incredibly versatile. Serve it with tortilla or pita chips or veggies—or use it to top grilled chicken, kabobs, frankfurters, burgers, or brats.


  • 2 large or 3 small avocados, diced small

  • ½ medium red onion, very finely diced

  • 2 jalapeños, finely diced (remove seeds for milder pico)

  • 1 small cucumber, seeded and diced small

  • 2 medium beefsteak tomatoes, diced small

  • 3 to four limes, for juicing

  • Kosher salt


In a large bowl, combine all ingredients. Squeeze the lime juice into the mixture and season generously with salt. Mix gently until combined. Taste and add more salt as needed. Cover and refrigerate until ready to serve.
