2 boneless skinless Smart Chicken breasts, cooked and shredded
½ cup walnuts, coarsely chopped
1 tablespoon olive oil
4 cups Brussels sprouts, washed, trimmed, and thinly sliced
¼ cup Parmesan cheese
1 pear, cored and diced
¼ cup dried cranberries or cherries, chopped
Savory Orange Dressing (recipe follows)
In a large skillet over medium-high heat, toast walnuts, tossing constantly, until golden brown. Transfer walnuts from skillet.
To the same skillet, add the oil and Brussels sprouts and sauté for 4 to 5 minutes. Remove from heat.
In a large bowl, toss the Brussels sprouts, walnuts, chicken, Parmesan, pears, and cranberries/cherries. Divide the salad among four plates and drizzle with Savory Orange Dressing (recipe follows) to finish.
Ingredients (for the Savory Orange Dressing)
Makes about ½ cup
½ cup chopped onion
1 tablespoon butter
Juice of 1 orange
1 tablespoon honey
2 tablespoons olive oil
Salt and pepper, to taste
In a small skillet over medium-high heat, sauté the onion in butter until the onions are golden brown, about 5 minutes. Transfer the onions to a food processor. Add the orange juice, honey, and oil and purée until smooth. Season with salt and pepper, to taste.
