Brussels Sprout Chicken Salad With Walnuts

Serves 4

Ingredients

  • 2 boneless skinless Smart Chicken breasts, cooked and shredded

  • ½ cup walnuts, coarsely chopped

  • 1 tablespoon olive oil

  • 4 cups Brussels sprouts, washed, trimmed, and thinly sliced

  • ¼ cup Parmesan cheese

  • 1 pear, cored and diced

  • ¼ cup dried cranberries or cherries, chopped

  • Savory Orange Dressing (recipe follows)

Directions

In a large skillet over medium-high heat, toast walnuts, tossing constantly, until golden brown. Transfer walnuts from skillet.

To the same skillet, add the oil and Brussels sprouts and sauté for 4 to 5 minutes. Remove from heat.

In a large bowl, toss the Brussels sprouts, walnuts, chicken, Parmesan, pears, and cranberries/cherries. Divide the salad among four plates and drizzle with Savory Orange Dressing (recipe follows) to finish.

Ingredients (for the Savory Orange Dressing)

Makes about ½ cup

  • ½ cup chopped onion

  • 1 tablespoon butter

  • Juice of 1 orange

  • 1 tablespoon honey

  • 2 tablespoons olive oil

  • Salt and pepper, to taste

Directions

In a small skillet over medium-high heat, sauté the onion in butter until the onions are golden brown, about 5 minutes. Transfer the onions to a food processor. Add the orange juice, honey, and oil and purée until smooth. Season with salt and pepper, to taste.
