2 cups cooked and shredded Smart Chicken
1 tablespoon olive oil
1 medium red onion, thinly sliced
Salt and pepper
2 14-ounce flatbreads
½ to 1 cup barbecue sauce, divided
2 cups smoked Gouda cheese, shredded
Preheat oven or grill to 425˚F. In a sauté pan on medium-high heat, heat the olive oil, then add the onions. Season with salt and pepper and cook until soft and beginning to caramelize.
On the flatbreads, spread a thin, even layer of barbecue sauce. Sprinkle half of the shredded Gouda cheese over the sauce. Top with the chicken, onions, and arugula. Sprinkle the other half of the cheese over the flatbreads; bake or grill for 12 minutes, or until cheese melts.
